Title: Marinated Vegetable Salad

Yield: 4 Servings

4cChopped tomatoes **SEE NOTE
1cChopped celery
1cChopped onion
1/2cChopped green pepper
3/4cRed wine vinegar
1/2cVegetable oil
1/4cSugar (or sugar subst.)
2tbPoppy seeds (optional)
1tbSalt
  **NOTE 2 cups more tomatoes can be added safely without adju

Combine tomatoes, celery, onion and green pepper in a large bowl. Toss lightly. Combine remaining ingredients in a jar. Cover tightly and shake vigorously. Pour marinade over vegetables. Cover and chill at least 3 hours. Yield: 6 to 8 servings. This is a recipe given to me by Marie Wright. It came from her Mother-In-Law. Formatted into MM by Ursula R. Taylor.
